VERDICCHIO DI MATELICA DOC
Verdicchio grapes, harvested just ripe in order to maintain high the acidity level of the must, and traditional white vinification. The wine is then surmaturated in the cellar, inside ancient vitrified cement tanks. Time is the only agent working to create the ultimate tertiary aroma in the wine sensory profile. If the stone had a flavor, it would probably be that of “Meridia”, a mineral, zesty, acidic, long, yellow-gold colored wine.
It is best served with medium-aged cheeses, elaborate fish preparations, well-structured main courses, white meats, or as a long or night aperitif. It is an important wine for those who love to taste wines that must be “listened to”.
